Cupcake prototypes

Well I made raisin cupcakes today (the black/brown specks you see are raisins, not burnt parts). Well, didn’t manage to make the sugar icings onto because I don’t have icing sugar. This is yummy~
My next mission is to make the icing on top, as well as make them in other flavours like chocolate or strawberry (this current ones are vanilla). My aim is to have them comparable to the ones on C-cup. (Yeah right)

The really simple recipe from Nigella Lawson (my favourite celebrity chef ever, and whom I think is the prettiest woman on this earth, with her bulges and all):

Ingredients
4 ounce sugar
4 ounce plain flour
4 ounce unsalted butter
2 eggs
Vanilla essence
1 tsp. baking powder
1 tsp. bicarbonate of soda

Method
Mix everything together in a bowl to get a slightly liquid consistency, fill up cupcake and bake (well, I sort of steamed them over water since I don’t have an oven).

If you want sugar icing on top, the recipe:

Ingredients
Sifted icing sugar
2 egg whites
half a lemon

Method
Mix the icing sugar and egg whites, and mix in the lemon juice from the lemon half. Beat till fluffy. Slather onto cup cake, and wait till it dries.
And you can also mix in food colouring to get coloured sugar icing! Now, that will be fun.

So I’ll keep you all posted if I ever decide to have a cupcake making venture. :P

    me: Oh no worries, that’s my friend. I think she forgot to put in her name in her moment of anguish because I’m not doing “real” cupcakes justice. Hahaha.

    eh, it’s not cupcake lah! it looks like a mound of mashed potatoes!

    me: -_- As I said, I don’t have the icing yet. And trust me, peel the nice sugar hat off any cupcake and you’ll see this.

    but yeah, I never knew cupcakes had icing until I went to school and teachers gave out cupcakes with frosting…. My mom had always made them plain.

    Well, some people consider cupcake frosting to be essential for it to be a cupcake, well some consider it, well, icing on cake, literally and figuratively. For me, icing is good if I want to give my cupcakes away as gifts, but for my own consumption, I’ll do away with the hassel. :D
